Acidified Coconut Water Concentrate - A new juice ingredient alternative

iTi continues to lead the way in coconut water, offering facilities without low-acid approval another option for achieving a 100% juice beverage while lowering caloric load. Acidified coconut water concentrate (CWC) is an excellent blending juice where high juice content is desired, and production occurs at a facility that can not process low acid products. iTi is pleased to announce the availability of 60 brix CWC with a pH below 4.6.

Continuing our innovation in coconut water, iTi Tropicals is pleased to introduce three new experimental coconut products:

  • Frozen Young coconut water
  • Frozen Young coconut water concentrate 60 brix
  • Frozen Young coconut pulp 5x5 mm

These products are from the Thai Fragrant variety of coconut. Prices of Thai Fragrant young coconuts are significantly higher because these young coconuts are harvested primarily for the water and not for the meat. The season for these products is from June through January.

These products are experimental, therefore we do not have large commercial quantities available. We make these products available so R&D can work with them, conduct pilot tests and trials. We will continue to pursue commercial levels of production based on a variety of factors, especially customer demand.

Since 2009, iTi has been a leader in conventional coconut water for the North American industrial ingredients market.  We are now pleased to introduce our Organic Coconut Water Concentrate.   This 60 brix product is now available in our warehouse.  With this organic product, iTi Tropicals offers beverage companies  an excellent natural, low-sugar, and low calorie alternative to existing filler juices.  And we're not through yet.  In the next few months, we will bring even more coconut water options to market.

Natural coconut water is the water inside a coconut. It is naturally filtered for nine months through the dense fibers of the coconut creating a nutritious, pure and refreshing isotonic beverage. Coconut water is naturally sterile and has five essential electrolytes, more potassium than a banana, no added sugars, no fat, no cholesterol and no preservatives. It is excellent for replacing lost electrolytes from exercise and illness. It can be incorporated in many beverage applications and is regarded as a natural sports drink.

In addition to health benefits, coconut water concentrate (CWC) has a compelling attribute for beverage companies: efficiency.  The standard for coconut water is 5 brix and thus a 60 brix concentrate can be diluted from 6.436 solids to 0.424 solids per gallon. This equates to one gallon of concentrate to 15.2 gallons of single strength.  For comparison, 1 truckload of pineapple concentrate yields approximately 6 loads of single strength pineapple juice, while 1 truckload of CWC yields 15 loads of single strength coconut water.  For more information visit: coconutwaterconcentrate.com

It is important to distinguish coconut water from coconut cream or milk.  Coconut cream is a smooth, thick liquid made from the meat of fresh coconuts. To make coconut cream, grated coconut meat is pressed to release the white liquid cream.  The principle fatty acid in coconut cream is lauric acid, which is the same fat found in abundance in mother's milk and is known to promote normal brain development and contribute to healthy bones.  It can enhance the aroma and taste of the dishes.  Coconut cream can be widely used in curries, desserts and cakes.  iTi supplies coconut cream both with and without stabilizers.
